Vegan Pancake Recipe with Almond Flour

Ingredients:

-1 cup almond flour
-1 teaspoon baking powder
-1/4 teaspoon salt
-1/4 cup almond milk
-1 tablespoon maple syrup
-1 teaspoon vanilla extract
-1 tablespoon coconut oil, melted

Instructions:

1. In a medium bowl, whisk together almond flour, baking powder, and salt.
2. In a small bowl, combine almond milk, maple syrup, vanilla extract, and melted coconut oil.
3. Pour wet ingredients into dry ingredients and stir until combined.
4. Heat a non-stick skillet over medium heat.
5. Pour 1/4 cup of batter onto the skillet.
6. Cook for 2-3 minutes, or until bubbles appear on the surface.
7. Flip pancake and cook for an additional 2-3 minutes.
8. Continue until all batter is used.
9. Serve pancakes warm with your favorite toppings.
